Slow-Cooker Turkey Chili


This is one of my family favorites!  Of course, living in Texas in the middle of August is not the absolute best time to indulge in a steaming bowl of chili.  It is 150 degrees outside for goodness sake!  But, we do love it, and so I will make it maybe once a month during the summer.  I like to top it with shredded cheese and serve it with cornbread.  It is super simple to make and is ready within 3-4 hours, depending on your slow cooker. 

Slow-Cooker Turkey Chili

1 lb lean ground turkey
1/4 cup diced onion
1 can low-sodium tomato soup
1 can petite diced tomatoes
1/4 cup water
1/2 tsp garlic
1/4 tsp chili powder
dash of pepper
3 cans beans (we use pinto, black beans, and cannelini beans)

Brown the turkey in a skillet with the onion.  (I usually do this the night before I prepare it)  Place turkey in bottom of slow cooker.  Add the rest of the ingredients in the order above.  No need to stir.  Cover and place slow cooker on high setting for 3-4 hours.  (I use a 6 quart slow-cooker) Serve and top with sour cream and cheese if you like.  Cornbread or biscuits make a great side item!  Yummy!  Enjoy!
